We craft each vintage using traditional values and personal attention from harvest to bottling. Our devotion to every detail results in the superior quality wines you will be able to enjoy.

Vineyard

The process starts during the long cold winters, developing plans for the growing season. During the growing season we travel to each vineyard to witness the caretaking of the grapes as they develop.

As the grapes near harvest, activity in the vineyard and winery increases. The common goals and working relationship with the vineyard owners allow for picking to occur at the right time. The grapes are hand-selected, hand picked, and transported to the winery.

The Crush

The annual crush is more of the event than the method. Because of our wine style, our gallons of must from a ton of grapes is significantly lower resulting in a higher quality juice. We settle the grapes prior to fermentation.

Our slow methods allow another important aspect of our process, the tasting of last years crush, remembering last years berries,and finally comparing to the taste of this years berries.

Fermentation/Maceration

We normally let the natural yeast encourages the development of the varietals' intensity and complexity, producing full bodied wines. During the fermentation process, the cap is gently punch down assuring proper juice over and mixture and temperature is controlled.

Extended maceration is part of our wine style. We evaluate the development of flavor and tannin by sampling the wine frequently. When the taste is correct we drain the wine off of the lees.

Barrel Age

During the barrel-aging process, the wine is racked only if needed. We do not disturbed the wine during this process and therefore we achieve good clarity, clean taste and polished tannins. We frequently monitor the need of this racking through experience.

Bottling

We bottle by hand at the winery unfined and unfiltered to respect the integrity of the grape and the quality of the taste.

If you decide to wait to enjoy our wine, please store on it's side and in a cool dark place. You may experience some sediment in the bottle which is natural for our wines.
